Bacon and onion burgers


Ingredients
2 slices of bacon
Half an onion, chopped into very small pieces
25g cheddar cheese, grated
1 slice of bread, grated to make breadcrumbs
1 egg, beaten
Dried parsley
Dried thyme

1. Fry the onion and bacon, then cut the bacon into very small pieces

2. Mix the bacon, onion, cheese, breadcrumbs, parsley and thyme in a bowl

3. Add the egg and mix

4. Shape into a burger and fry for 5 minutes each side until firm

Serves 1

Creamy spaghetti and meatballs


Ingredients
100 minced pork
1 spring onion, chopped
Half an egg, beaten
75g spaghetti
50 soft cheese
Dried oregano

1. Boil the spaghetti

2. Mix the minced pork, half of the chopped onion, egg and oregano in a bowl

3. Shape into small balls

4. Fry with the rest of the onion for 10-15 minutes, turning regularly

5. Add the spaghetti and soft cheese and stir through for 5 minutes

Bacon pancakes


Ingredients
2 slices bacon
50g self raising flour
1 egg, beaten
3 tbsp milk
20g cheddar cheese, grated
1 tsp dried parsley

1. Fry the bacon then cut into small pieces

2. Mix the flour, cheese, bacon and parsley in a bowl

3. Add the egg and milk and mix into a batter

4. Divide mixture in half and fry for 4-5 mins each side until firm

Pork and apple burgers


Ingredients
100g minced pork
1 small bramley apple, grated
1 spring onion, chopped
1 slice bread, grated to make breadcrumbs
Half an egg, beaten

1. Fry the onions until soft

2. Mix the minced pork, apple and breadcrumbs together

3. Add the onion and mix

4. Add the egg, mix and shape in to burgers

5. Fry in a griddle pan until cooked through

6. Serve in a bread bun

Salmon and spinach filo quiche


Ingredients
1 salmon fillet
Filo pastry
1 egg
150ml double cream
5 or 6 leaves of spinach, boiled
Dried parsley
30g cheddar cheese, grated

1. Preheat oven to 200°C / 400°F / gas 6. Grease a small pie dish

2. Line the pie dish with 4 layers of filo pastry (may have to cut to size/shape)

3. Fry the salmon until cooked and put in the dish with spinach, cheese and parsley

4. Beat the egg and double cream together and pour into the dish

5. Bake for 35-40 minutes until firm

Beef burgers


Ingredients
200g beef mince
Half an onion, chopped
30g fresh breadcrumbs
1 egg
Dried oregano
Bread bun
Lettuce

1. Fry the onion until soft

2. Mix together the mince, onion, breadcrumbs, egg and herbs

3. Shape into 2 burgers and fry for about 10 minutes each side until cooked all the way through

4. Serve in bread buns with lettuce

Ginger biscuits


Ingredients
200g self raising flour
100g sugar
75g butter
2 tsp ginger powder
4 tbsp golden syrup
1 egg, beaten

1. Preheat oven to 180°C / 350°F / gas 4

2. Mix the flour, sugar and ginger powder in a bowl

3. Rub in the butter to make breadcrumbs

4. Add the golden syrup and egg and mix well

5. Place lumps of the mixture on a greased baking tray and bake for 15-20 mins until brown

Biscuits


Ingredients
225 self raising flour
100g butter
100g sugar
1 egg, beaten
A few drops of vanilla essence

1. Preheat oven to 180°C / 350°C / gas 4

2. Mix flour, sugar and butter to make bread crumbs

3. Add vanilla essence and egg and mix to make a dough

4. Cut out shapes using a cookie cutter

5. Place on a greased baking tray and bake for 10-15 minutes

Carbonara


Ingredients
70g spaghetti
3 slices of bacon, chopped
1 egg
150ml single cream

1. Boil the spaghetti until soft and the drain the water off

2. Fry the bacon and add to the spaghetti

3. Beat the egg and cream together and pour over the spaghetti and bacon

4. Stir continuously over a low heat for 5-10 minutes.

Salmon and egg bake


Ingredients
1 salmon fillet
2 eggs
3 medium tomatoes, chopped
1/2 onion, chopped
25g cheddar cheese, grated
Parsley, chopped

1. Fry the salmon, onion and tomatoes until salmon is cooked and onions are soft

2. Crumble the salmon, add the parsley and mix. then put in an ovenproof dish

3. Crack the eggs on top of the ingredients in the dish and scatter the cheese on top

4. Bake for 20-25 minutes until eggs are cooked

Mini cupcakes with chocolate


Ingredients
50g self raising flour
50g sugar
50g butter
1 egg
Chocolate chips

1. Preheat over to 180°C / 350°F / gas 4

2. Beat sugar and butter together

3. Add flour and egg and mix well

4. Put mixture into small paper cupcake cases on a baking tray

5. Push 3 chocolate chips into the top of each one

6. Bake for 15 minutes and leave to cool

Bacon and egg salad



Ingredients
Lettuce
3 slices of bacon
1 egg
40g feta cheese, crumbled
4 tbsp mayonnaise
Chopped chives

1. Cut the bacon into small pieces and fry

2. Poach the egg

3. Place the lettuce, bacon, cheese, mayonnaise and chives in a bowl and mix, then arrange on a plate

4. Put the egg on top of the salad

Feta filo parcels


Ingredients
3 sheets filo pastry
100g feta cheese, crumbled
1 egg, beaten
1 tsp dried parsley

1. Preheat oven to 200°C / 400°F / gas 6

2. Lie the pastry sheets on top of each other and cut into 12 squares (3x4)

3. Take each square (3 layers) and push into the holes in a baking tin (as shown in photo)

4. Mix the cheese, egg and parsley together and put equal amounts into each pastry

5. Scrunch up the corners of each pastry to make a little parcel and brush with a small amount of milk or beaten egg

6. Bake for 15 minutes

Feta, sundried tomato and basil quiche


Ingredients

Savoury pastry case
2 medium eggs
150ml single cream
100g feta cheese, crumbled
100g sundried tomatoes
Fresh basil

1. Preheat oven to 180°C / 350°F / gas 6

2. Place the tomatoes, cheese and basil into the pastry case.

3. Beat the eggs, add the single cream and mix

4. Pour into the pastry case

5. Bake for 30 mins

Spicy chicken


Ingredients
1 chicken breast fillet
1 egg, beaten
1 tbsp plain flour
1 tsp mustard powder
1 tsp paprika
1 tsp oregano
Pinch of salt and pepper
Breadcrumbs (3 slices of bread, no crusts)

1. Mix together the flour, salt, pepper, mustard powder, paprika, oregano

2. Coat the chicken in the flour mixture, then the egg, then the breadcrumbs

3. Bake for 25-30 minutes

Baked eggs with tomato and chorizo


Ingredients
50g chorizo, chopped
400g tin chopped tomatoes
1 red onion, chopped
2 eggs
1/2 tsp garlic powder
oregano
parsley

1. Preheat oven to 200°C / 400°F / gas 6. Grease a small baking dish

2. Fry the chorizo and onion for 5 minutes

3. Add the tomatoes and garlic powder and heat for 5 minutes, stirring frequently

4. Stir in the herbs then put the mixture into the dish, make a hollow in the middle

5. Break 2 eggs into the hollow, season and bake for 15 minutes or until the eggs are cooked

Fish goujons


Ingredients
400g white fish
flour
egg, beaten
2 slices bread, grated into breadcrumbs

1. Preheat oven to 200°C / 400°F / gas 6

2. Cut fish into about 5 cm long chunks and season

3. Roll in flour, then egg then coat with breadcrumbs

4. Wrap in foil and place on a baking tray. Bake for 15 minutes

5. Open up foil and cook for another 10 minutes until breadcrumbs are golden

Potato cakes


Ingredients
400g potatoes, boiled and grated
200g carrots, grated
1 onion, chopped
1 egg, beaten

1. Preheat oven to 200°C / 400°F / gas 6

2. Fry the onion until soft.

3. Mix together the potato, carrot and onion. Season and stir in the egg.

4. Shape the mixture into burger shapes and place on a greased baking tray

5. Bake for 15 minutes, turn over then bake for another 15 minutes

Toad in the hole


Ingredients
2 sausages
1 egg
60g flour
150ml milk

1. Preheat oven to 200°C / 400°F / gas 6. Grease a baking tin

2. Put the sausage in the tin and bake for 20 minutes

3. Meanwhile mix the flour, egg and milk together, season then whisk until smooth.

4. Remove the tin with the sausages from the oven, immediately pour the batter over the sausages and return to the oven for another 20 minutes until batter has puffed up and cooked

Breaded salmon with hollandaise sauce and parsley


Ingredients
1 salmon fillet
egg, beaten
flour
2 slices bread, crusts cut off
1tsp dill
hollandaise sauce
fresh parsely, chopped

1. Preheat oven to 200°C / 400°F / gas 6

2.  Grate the bread into breadcrumbs, stir in the dill and lie out on a plate

3.  Dip the salmon into the flour, then the egg, then coat with the breadcrumbs

4. Wrap in foil and bake for 20 minutes, open up the foil and bake for a further 10 minutes

5. Make/heat the hollandaise sauce according to instructions and mix in the chopped parsley

6. Place the salmon on a plate and pour the sauce over
