Bacon and onion burgers


Ingredients
2 slices of bacon
Half an onion, chopped into very small pieces
25g cheddar cheese, grated
1 slice of bread, grated to make breadcrumbs
1 egg, beaten
Dried parsley
Dried thyme

1. Fry the onion and bacon, then cut the bacon into very small pieces

2. Mix the bacon, onion, cheese, breadcrumbs, parsley and thyme in a bowl

3. Add the egg and mix

4. Shape into a burger and fry for 5 minutes each side until firm

Serves 1

Pork and apple burgers


Ingredients
100g minced pork
1 small bramley apple, grated
1 spring onion, chopped
1 slice bread, grated to make breadcrumbs
Half an egg, beaten

1. Fry the onions until soft

2. Mix the minced pork, apple and breadcrumbs together

3. Add the onion and mix

4. Add the egg, mix and shape in to burgers

5. Fry in a griddle pan until cooked through

6. Serve in a bread bun

Beef burgers


Ingredients
200g beef mince
Half an onion, chopped
30g fresh breadcrumbs
1 egg
Dried oregano
Bread bun
Lettuce

1. Fry the onion until soft

2. Mix together the mince, onion, breadcrumbs, egg and herbs

3. Shape into 2 burgers and fry for about 10 minutes each side until cooked all the way through

4. Serve in bread buns with lettuce

Fish cakes with cheese


Ingredients
1 white fish fillet
2 medium potatoes, peeled and chopped in half
50g soft cheese
Small lump of butter
Dried parsley
2 slices bread, grated to make breadcrumbs
2 tbsp olive oil

1. Boil the potatoes until soft

2. Fry the fish and crumble it into small pieces

3. Put the potatoes in a bowl, add the butter and mash together

4. Add the fish and parsley and a pinch of salt and pepper and mix well

5. Preheat oven to 200°C / 400°F / gas 6 and grease a baking tray

6. Divide mixture into 4 equal sized burger shapes and put the cheese on 2 of them

7. Put the other 2 on top of the ones with cheese and press the edges together

8. Stir the breadcrumbs and olive oil together and coat the fish cakes with it

9. Bake for 25-30 minutes

Spicy chicken


Ingredients
1 chicken breast fillet
1 egg, beaten
1 tbsp plain flour
1 tsp mustard powder
1 tsp paprika
1 tsp oregano
Pinch of salt and pepper
Breadcrumbs (3 slices of bread, no crusts)

1. Mix together the flour, salt, pepper, mustard powder, paprika, oregano

2. Coat the chicken in the flour mixture, then the egg, then the breadcrumbs

3. Bake for 25-30 minutes

Fish goujons


Ingredients
400g white fish
flour
egg, beaten
2 slices bread, grated into breadcrumbs

1. Preheat oven to 200°C / 400°F / gas 6

2. Cut fish into about 5 cm long chunks and season

3. Roll in flour, then egg then coat with breadcrumbs

4. Wrap in foil and place on a baking tray. Bake for 15 minutes

5. Open up foil and cook for another 10 minutes until breadcrumbs are golden

Breaded salmon with hollandaise sauce and parsley


Ingredients
1 salmon fillet
egg, beaten
flour
2 slices bread, crusts cut off
1tsp dill
hollandaise sauce
fresh parsely, chopped

1. Preheat oven to 200°C / 400°F / gas 6

2.  Grate the bread into breadcrumbs, stir in the dill and lie out on a plate

3.  Dip the salmon into the flour, then the egg, then coat with the breadcrumbs

4. Wrap in foil and bake for 20 minutes, open up the foil and bake for a further 10 minutes

5. Make/heat the hollandaise sauce according to instructions and mix in the chopped parsley

6. Place the salmon on a plate and pour the sauce over

Turkey burgers


Ingredients
500g turkey mince
1 small onion, chopped
50g fresh breadcrumbs (about 2 slices of bread)
1 tsp rosemary
1 tsp sage
4 large bread buns

1. Fry the onion until soft

2. Mix together the mince, onion, breadcrumbs and herbs

3. Shape into 4 burgers and chill for 30 minutes

4. Grill the burgers for about 10 minutes each side until cooked all the way through

5. Serve in bread buns

Salmon with mozzarella and herb crust


Ingredients
1 salmon fillet
30g mozzarella, cubed or sliced
25g breadcumbs
1tbsp dried herbs (I used dill and parsley)
2tsp olive oil

1. Preheat oven to 200°C / 400°F / gas 6

2. Wrap salmon in tin foil and bake for 15 minutes

3. While salmon is cooking, mix herbs with breadcrumbs, add olive oil and stir well

4. Put mozzarella on top of the salmon and then the breadcrumb mixture

5. Bake for another 5-10 minutes until breadcrumbs have browned

Cheesy leek and ham bake


Ingredients
1 small leek (cut in half)
4 slices ham
100ml creme fraiche
30g parmesan
breadcrumbs

1. Preheat oven to 200°C / 400°F / gas 6

2. Boil the leeks in a shallow pan for 5 minutes until soft. Remove from water

3. Wrap each leek in 2 slices of ham and place in a small baking tin

4. Mix creme fraiche with 50ml of the water reserved from the leeks, stir in the parmesan and bread crumbs

5. Pour over the leeks in the tin and bake for 15 minutes
