Bacon and onion burgers


Ingredients
2 slices of bacon
Half an onion, chopped into very small pieces
25g cheddar cheese, grated
1 slice of bread, grated to make breadcrumbs
1 egg, beaten
Dried parsley
Dried thyme

1. Fry the onion and bacon, then cut the bacon into very small pieces

2. Mix the bacon, onion, cheese, breadcrumbs, parsley and thyme in a bowl

3. Add the egg and mix

4. Shape into a burger and fry for 5 minutes each side until firm

Serves 1

Bacon pancakes


Ingredients
2 slices bacon
50g self raising flour
1 egg, beaten
3 tbsp milk
20g cheddar cheese, grated
1 tsp dried parsley

1. Fry the bacon then cut into small pieces

2. Mix the flour, cheese, bacon and parsley in a bowl

3. Add the egg and milk and mix into a batter

4. Divide mixture in half and fry for 4-5 mins each side until firm

Creamy chicken and bacon


Ingredients
1 chicken fillet (chopped)
2 slices smoked bacon (chopped)
Half an onion (chopped)
1 chicken stock cube
2tbsp double cream
3 or 4 leaves of lettuce, torn up
Dried thyme
Potatoes

1. Preheat oven to 200°C / 400°F / gas 6 and bake potatoes for 35-40 minutes until cooked

2. Fry the chicken and onion until brown then add the bacon and thyme and cook for another 5 minutes

3. Dissolve stock cube in 200ml water and pour over the chicken, onion and bacon

4. bring to the boil then simmer for 15 minutes stirring regularly

5. Stir in the lettuce and double cream and serve with the potatoes

Chicken chasseur spaghetti


Ingredients
1 chicken fillet, chopped
3 slices bacon, chopped
70g spaghetti
Half tin of chopped tomatoes
Half an onion, chopped
1 beef stock cube
1 tsp worcestershire sauce
Dried parsley
Dried basil

1. Fry the chicken, onion and bacon

2. Dissolve the stock cube in 250ml water and pour over the chicken, bacon and onion

3. Bring to the boil and add the spaghetti and worcestershire sauce.

4. Add the tomatoes and simmer until sauce starts to thicken

5. Stir in the parsley and basil and serve

Cauliflower cheese with bacon


Ingredients
100g cauliflower, chopped
4 slices bacon, chopped
Half an onion, chopped
1 packet cheese sauce mix
30g cheddar cheese, grated

1. Preheat oven to 200°C / 400°F / gas 6. 

2. Fry the cauliflower, bacon and onion until everything is cooked

3. Make the cheese sauce (packet instructions)

4. Put the cauliflower, bacon and onion in a baking dish and pour the cheese sauce over

5. Sprinkle the grated cheese on top

6. Bake for 25-30 minutes

Carbonara


Ingredients
70g spaghetti
3 slices of bacon, chopped
1 egg
150ml single cream

1. Boil the spaghetti until soft and the drain the water off

2. Fry the bacon and add to the spaghetti

3. Beat the egg and cream together and pour over the spaghetti and bacon

4. Stir continuously over a low heat for 5-10 minutes.

Bacon and egg salad



Ingredients
Lettuce
3 slices of bacon
1 egg
40g feta cheese, crumbled
4 tbsp mayonnaise
Chopped chives

1. Cut the bacon into small pieces and fry

2. Poach the egg

3. Place the lettuce, bacon, cheese, mayonnaise and chives in a bowl and mix, then arrange on a plate

4. Put the egg on top of the salad

Potato, bacon and onion in cheese sauce


Ingredients
2 small potatoes (sliced)
1 onion (sliced)
3 slices of bacon (chopped)
25g butter
packet of cheese sauce (to make about 150ml)
1 tsp rosemary
1/2 tsp thyme
1/2 tsp poppy seeds

1. Melt the butter in a pan and fry the potatoes and onions for 10 minutes.

2. Add the bacon and cook for a further 5 minutes. Stir in the herbs and poppy seeds

3. Make the cheese sauce according to packet instructions and pour over the other ingredients in the pan

4 Stir well and serve immediately

Chicken and bacon risotto


Ingredients
75g risotto rice
1 chicken breast, chopped into chunks
3 slices of bacon, chopped
1 onion
50g peas
1 chicken stock cube
400ml water
rosemary and thyme

1. Boil the water and dissolve the stock cube, keep it hot.

2. Fry the chicken, onion and bacon until they are all cooked.

3. Add the rice, peas and some of the stock. Stir and cook until it has been absorbed then add some more, gradually until all of the stock is absorbed

4. Stir in the herbs

Cheese and bacon potato salad


Ingredients
150g small potatoes (or larger ones cut up)
3 slices bacon
5 tbsp mayonnaise
2 tbsp parmesan, grated
1 tsp poppy seeds
1 tsp parsley
1 tsp chives

1. Boil the potatoes for 20-25 minutes until cooked. Meanwhile fry the bacon

2. Mix the mayonnaise, parmesan, poppy seeds, parsley and chives together in a bowl

3. Add the potatoes and bacon and mix well

Cheese and bacon quiche


Ingredients
savoury pastry case
4 slices smoked bacon, chopped
70g cheddar cheese, grated
150ml single cream
2 medium eggs
dried thyme


1. Preheat oven to 180°C / 350°F / gas 6

2. Fry the bacon

3. Beat the eggs, add the single cream and mix

4. Place bacon and cheese in the pastry case. Pour over the egg and cream mixture

5. Sprinkle dried thyme over the top

6. Bake for 20-25 mins

Cheese and bacon pasta bake


Ingredients
200g pasta, boiled
200g smoked bacon, chopped
4 eggs
200ml creme fraiche
100g mature cheddar

1. Preheat oven to 180°C / 350°F / gas 4 and grease a baking tin / dish

2. Fry the bacon until crisp. Put bacon and pasta into tin

3. Beat the eggs and creme fraiche together and add the cheese. Stir.

4. Pour mixture over the past and bacon in the tin and stir

5. Bake for 40-45 minutes

Mediterranean eggs


Ingredients
200g potatoes (chopped into small cubes)
2 slices bacon
250g tomato pasta sauce
2 eggs
half an onion
tomotoes and red peppers
basil

1. Boil the potatoes for 10 minutes until soft. Drain

2. Fry the bacon, onion, tomatoes and peppers for 5 minutes then add the potatoes

3. Add the pasta sauce and herbs and stir well.

4. Make a hole in the middle of the mixture and crack 2 eggs into the hole

5. Cover and cook over low heat for 10 minutes until eggs are cooked

Bacon spaghetti with pea sauce


Ingredients
300g spaghetti
8 slices of bacon (preferably smoked)
1 vegetable stock cube
2 tbsp olive oil
100g frozen peas
2 tsp dried mint
mozzarella ball (chopped into small cubes)

1. Cook spaghetti and peas in boiling water until cooked

2. Pour 200ml of the boiling water over the stock and mix. Add the peas and crush. Add the mint and oil

3. Drain the rest of the water off the spaghetti and pour the pea sauce over it. Mix

4. Add mozzarella cubes, stir, and serve

Bacon wrapped chicken with scrambled eggs and tomatos


Ingredients
1 chicken breast
3 slices of bacon
soft cheese
mixed herbs (I used chives, parsley and sage)
tomatoes
2 eggs

1. Preheat oven to 220°C / 425°F / gas 7

2. Cut a slit in the chicken and fill with cheese and herbs. Wrap the bacon slices around the chicken

3. Wrap in tin foil and bake for 30 minutes

4. While the chicken is cooking, chop the tomatoes into chunks. Fry and stir until mushy then add eggs and stir until set

Baked Potato with sour cream and cheese filling



1. Preheat oven to 200 °C / 400 °F / gas mark 6

2. Wash a large baking potato and remove any bad bits

3. Stab it all over with a fork (to let the steam out so it doesn't explode) then brush the skin with oil

4. Wrap loosely in tinfoil, leaving a hole at the top and bake for 1 hour - 1 hour 15 minutes, until soft all the way through

5. Mix some sour cream, cheese and chives together for the filling and add when cooked
